Blueberry Cottage Cheese Muffins
Makes 12 small

Ingredients :

1/3 cup low-fat cottage cheese
1 large egg, beaten
1 cup all-purpose flour
1/2 tsp. salt
2 tsp. baking powder
2 tbsp. sugar
1/3 cup milk
3/4 cup fresh or frozen blueberries

Blend the beaten egg and cottage cheese. Sift the flour, salt, baking
powder and sugar. Stir into the egg and cottage cheese mixture. Add
milk and stir lightly, then gently fold in the blueberries. Spoon into a
greased muffin pan and bake in a preheated 425-degree oven for 16-
20 minutes.
