Dessert Recipes : Apricot Mousse


Ingredients :

1 6-oz. package dry apricot gelatin
1 15-oz. can crushed pineapple
Two thirds cup sugar
1 8-oz. container cream cheese
1 large jar apricot baby food
1 14-oz. can evaporated milk

Combine dry gelatin with undrained pineapple and sugar in a saucepan and cook for 5 minutes, add cream cheese and cook until cheese melts, stir in baby food and allow mixture to cool. Whip milk and combine with gelatin mixture. Pour into a 9 x 12-inch greased glass-baking dish and chill in the refrigerator until ready to serve.

Tips : Use your favorite sugar substitute and low fat evaporated milk.
