Main Course Recipes : Barbeque Roasted Salmon
Ingredients :
One third cup pineapple juice
One quarter cup fresh lemon juice
4 - 6 salmon fillets
One quarter cup brown sugar
1 Tbsp. chili powder
1 Tbsp. lemon zest
1 tsp. ground cumin
One half tsp. ground cinnamon
One half tsp. salt
Combine pineapple juice, lemon juice and salmon fillets in a bag and seal. Marinate in the refrigerator for an hour. Remove salmon and discard juices. Combine next 6 ingredients and mix well. Rub mixture on each fillet. Place fillets in a baking dish coated with cooking spray. Bake at 400 degrees for 12 - 15 minutes until fish is flaky. Serve with fresh lemon slices.
Tips : You can use your favorite sugar substitute but the sugar really isn't that big of a problem in this recipe because it is just part of the rub.
Zucchini and Rice Casserole
Ingredients :
2 pounds zucchini, sliced
1 small sweet onion, chopped
One half cup chicken broth
2 cups cooked rice
1 cup sour cream
1 cup sharp cheddar cheese, shredded
One quarter cup Italian seasoned breadcrumbs
2 eggs
Salt and pepper to taste
One quarter cup Parmesan cheese
Combine zucchini, onion and chicken broth in a saucepan and simmer for about 15 minutes until onion and zucchini are tender. Combine zucchini mixture with rice, sour cream, cheddar cheese, breadcrumbs, eggs and salt and pepper and mix well. Spray a 13 x 9-inch baking pan with cooking spray and place mixture inside. Top with Parmesan cheese and bake for 30 - 35 minutes at 350 degrees.
Tips : Use low fat sour cream, cheese and your favorite egg substitute.
