Main Course Recipe : Chicken with Spicy Orange Sauce
Ingredients :
8 boneless chicken breasts
1 cup orange juice
2 Tbsp. grated orange rind
One third cup olive oil
One third cup vinegar
One quarter cup dried chiles
2 cloves garlic
1 tsp. cinnamon
1 Tbsp. sugar
One half tsp. salt
One half tsp. cayenne pepper
Combine all ingredients except chicken in a blender or food processor until smooth. Place chicken in a large baking dish and pour sauce over chicken. Bake at 350 degrees for 45 minutes or until chicken is fully cooked. Leave out the chiles and the cayenne pepper to make non-spicy orange sauce.
Tips : Use skinless chicken.
Very Vegetable Casserole
Ingredients :
1 14-oz. can cream of celery soup, undiluted
2 cups frozen green beans
2 cups frozen white corn
1 cup celery, chopped
One half cup onion, chopped
One third cup sour cream
One half cheddar cheese, shredded
One half cup corn flakes
Combine all ingredients except corn flakes in a casserole dish and then sprinkle corn flakes on top. Bake at 350 degrees for 30 - 40 minutes.
Tips : Use low fat soup, sour cream and cheese.
